Shen Spiced Banana Bread

This recipe makes a basic but delicious and moist banana bread. Butter has been replaced with healthy oils and if you would prefer to make it completely vegan, you could replace the eggs with flax eggs instead. 

 

Dry Ingredients:

2 cups of flour

1 tsp baking soda

1 tsp cinnamon

1 tsp Shen

Handful of sultanas

Wet Ingredients:

2-3 mashed bananas

2 eggs

1/2 cup of plant milk

1/3rd cup of olive or coconut oil

1 tsp vanilla essence

2-3 table spoons of maple syrup

 

Pre heat oven to 170 degrees.

Place mix dry and wet ingredients separately then fold together. pour into an oiled or baking paper lined tin and bake for 50-55min or until a knife or skewer comes out clean. Enjoy warm smothered with plant based butter, alongside your favourite Tao Tonic!
