Shen Spiced Cookies

This is a delicious vegan whole foods recipe that uses the foundations of a cookie recipe from Natural Harry. She is an amazing cook, who use to be our landlord for our yoga studio! I am a chocolate addict and use chocolate chips, but you could substitute with cacao nibs, sultanas or goji berries. Full of whole food goodness, plus they are so easy to prepare.

 

Ingredients:

2 cups of rolled oats

2 ripe bananas

2 tablespoons of hulled tahini

4 medjool dates

1/4 teaspoon of salt

1 teaspoon of baking powder

2 teaspoons of Shen 

1/4 cup of choccy chips

 

Pre heat oven to 180 degrees.

Place all ingredients except choccy chips in a food processor. Blend until all ingredients are mixed. Add the chocolate and fold in.

 

Roll into balls and press flat onto a lined baking tray. Bake for 12-15 minutes or until golden brown. Delicious.
